Using my tomato’s and basil before it goes bad.

Savor the authentic Italian flavors of this exquisite pasta sauce.

**Ingredients:**

– 3 lbs fresh tomatoes (preferably San Marzano or heirloom), peeled and chopped

– 8 oz fresh mozzarella cheese, sliced

– 1/4 cup extra virgin olive oil

– 4 cloves garlic, minced

– 1/4 cup fresh basil leaves, chopped

– Salt and pepper to taste

– 1/2 cup grated Parmesan cheese (optional)

– 2 Tbsp heavy cream (optional)

**Instructions:**

1. Heat olive oil in a large saucepan over medium heat.

2. Sauté garlic until fragrant.

3. Add tomatoes and cook until softened.

4. Stir in basil, season with salt and pepper.

5. If using, add Parmesan and stir until melted.

6. If desired, add heavy cream for desired consistency.

7. Cook pasta until al dente.

8. Toss pasta in sauce until evenly coated.

9. Serve immediately, garnished with basil and mozzarella.

**Variations:**

– Enhance the dish by adding grilled chicken or sausage for added protein.

– Infuse sweetness with roasted bell peppers.

– Substitute mozzarella with burrata or stracciatella cheese.

– Add a touch of heat with red pepper flakes.
