Beef & Italian Sausage Herb Meatloaf with Tomato Glaze

### Ingredients

Meatloaf

– 1 lb ground beef (80/20)

– 1 lb Italian sausage (mild or sweet, casing removed)

– 1 cup breadcrumbs or panko

– ½ cup milk

– 1 small onion, finely diced

– 3 cloves garlic, minced

– 2 eggs

– 2 tbsp ketchup

– 1 tbsp Worcestershire sauce

– 2 tbsp chopped fresh parsley

– 1 tsp chopped thyme

– ½ tsp finely chopped rosemary

– ½ tsp red pepper flakes

– ½ tsp smoked paprika

– 1 tsp kosher salt

– ½ tsp black pepper

– ½ cup grated parmesan (optional)

Tomato Glaze

– ½ cup ketchup

– 2 tbsp brown sugar

– 1 tbsp Worcestershire sauce

– 1 tsp Dijon mustard

– 1 tsp apple cider vinegar

### Instructions

1. Preheat oven

Heat oven to 375°F.

2. Soften breadcrumbs

In a bowl mix breadcrumbs and milk.

Let sit 3–4 minutes until softened.

3. Build the meat mixture

In a large bowl combine:

– ground beef

– Italian sausage

– soaked breadcrumbs

– onion

– garlic

– eggs

– ketchup

– Worcestershire

– parsley, thyme, rosemary

– red pepper flakes

– paprika

– salt and pepper

– parmesan (optional)

Mix gently until just combined.

Do not overmix.

4. Shape the loaf

Form into a loaf on a parchment-lined sheet pan or place in a lightly greased loaf pan.

5. Add glaze

Mix glaze ingredients and spread half over the top.

6. Bake

Bake 40 minutes.

Remove and spread the remaining glaze over the loaf.

7. Finish cooking

Return to oven and bake 15–20 minutes more, until internal temperature reaches 160°F.

8. Rest before slicing

Let rest 10 minutes before cutting.

### Chef’s Notes

– Italian sausage keeps the meatloaf extra juicy and flavorful.

– For extra richness, lay 3–4 strips of bacon across the top before baking.
